Not real exciting but I roasted some fresh greens.   Tossed them on the color coded green M/T.


Halfway done.


Almost Done. 


Done and peeled!   I had about a 66% success rate in keeping them whole, but they are all good:

Nice !!!
I've got Hatch chiles that need to go......wanted to keep them intact for giant "Turds, so this is a great example.....tried them previously just wrapping up & cooking, but the skin was still papery & tough on some....hit & miss.....

PS: Did you sweat them in a ziplock berween cooking & peeling, or no.....?

Never had hatch chilies but they look great Gerd. I'd assume they are local to west coast area. Spicy or mild?

Hatch Chiles are great and off the kettle even better, those look perfect. The old man lives in Albuquerque and hooks me up. This time around I picked up some Hatch Green Clili Powder and dang it's good. Where he gets them it's either med or hot, and really it's more like hot and hotter  ;D never had one without a kick.

You can find them mostly in New Mexico and Arizona. Last year we started seeing them in grocery stores in San Diego which is great. Pops buys them off a truck by the bushel.

I usually uae a paper bag for 15 minutes before peeling.  This time it was in fact a Ziploc (no paper bags around).

The heat varies, but are what we locally consider a very mild chile.

By the way, some of these made their way in to a pot of doctored up smoked beans.  I used Bushs original, and was a little worried that the flavors would not mesh well.  I worried for nothing.  :)

NICE!  I've only had them one time, when I was in New Mexico a few years back.  Really good flavor in chili.  A restaurant in Atlanta (actually Decatur) has been going to NM for the past 4-5 years to bring back 10,000 pounds to throw a big shindig - It's this weekend and we're planning on going this year.

My peppers on the grill are always stuffed & wrapped in bacon.  Wifey doesn't like em as-is.  I see a lot more grilled peppers in *my* future.
I've always had gas...  And now a bunch of kettles because of this place.  Thanks!

Excellent pictures! My local grocer has a bunch of fresh Hatch chiles every September. Made some green chile stew Sunday.  Unbelievable flavor when you roast them.
