Well, the pork turned out AMAZING. Many thanks for buckie for all the wisdom. I ended up with a whole hunk of meat I didn't even pull yet. So I guess I'll reheat that in the oven and put some pulled pork in the freezer. It was a big hit at the party. Here are a few photos of the finished product.
