I went looking for something on BBQ Pit Boys about temp control & got sidetracked........

Nothing says summertime like 12 metric tonnes of grilled beef.

I went to a wedding the other week and the groom was from Uruguay
He cooked up a beautiful feast on his home made BBQ (44 gallon drum cut in half)
There was some great food and flavours that I'd never tasted before
As things cooked he would take them off , slice it up into small pieces and everyone used tooth picks to dig in
It was a pretty low key wedding and the food was the highlight for me

only usual difference is he almost always uses skewers & a whole lot of the stuff is designed like you say, to be cut or portioned into small bite-sizers.............

It amazed me how well it cooked over a small amount of fuel, no lid and about a foot between the fuel and the cooking grate
The highlight was the pork belly and black pudding sausages
