Simple ribs

This time I remembered to take a couple shots.

First, "my" setup for a 5 hour cook:



Single Weber charcoal basket to one side, water pan opposite.  Kept the temp at the grate as close to 225 as possible for the 5 hours.  Tin foil wrap of hickory chips was kept over the heat (or off to the side if it got too hot).  Potato/beans/cauliflower put on at the 4 hour mark.



Two months ago I'd have said I couldn't do this sort of thing. :)

Use that momentum to build confidence and expand your current limits. Once you build a good foundation you will be able to cook anything based on experience, fundamentals, and instincts.

Beautiful set-up ... great looking food! I took me some time to get confident using the kettle ...
But, I never got frustrated. Kept using it and trying different things and techniques ... Now it's easy. My favourite cooker.  :D 8) ;)
