How I like to cut and grill chicken

My version of a "spatchcock"

Actually I had cut them like this for years before I heard of spatchcock. I cut the back out and serve it as a piece (for me!!!).:)

Looks good, nice and crusty! I have a whole chicken I am planning on cooking in the next few days and think I just may cut it up like that. :)

I've been doing lots of chicken lately. Legs, thighs, wings.. etc. I need to get on this! It looks amazing!

Good looking chicken!  I do it this way now, used to do beercan chicken but no more.
Wanted: 18" Platinum any color will work
This is my Kettle there are many like it but this one is mine......

i love doing it this way. indirect with some smoke until it's mostly cooked through, brush a shit-ton of garlic herbed butter on it and flip it over skin side down over the coals for 3 minutes to give it some color.

beer can chicken is a waste of beer.
spatchcock is where its at!

Yes I do remove the keel bone.
I see a lot of pics where they cut out the backbone and fold it the other way, but I like me some back!8)

I've only done this once, and it came out great. Sorry, no after shots, we ate it to quick. I found the cook time was shorter this way and easier to cut up once done. I will be doing this again this weekend and will cut using your method as I like the back to and was tempted to grill it seperate  ;D
