Kettle Turkey

Kroger brand turkey that was on sale last Christmas. 15.88 lbs. I choose not to brine it as it was already "enhanced".



I rubbed it with some canola oil and then just salt and pepper for season. The cavity was stuffed with celery, carrots, onion, and an apple. I forgot I wanted to give a quick shot of white wine for more aroma.

I lined the pan with carrots and celery to elevate the bird. I used one full chimney and a couple chunks of apple.




One hour in. Temps seem a little low and I am not sure why. Maintaining about 350 per the dome thermometer. Will check with the Thermopen in an hour and add more fuel.

Two hours in. Breast is at 145, thigh is at 140. Kettle temp is maintains around 375.

That looks great! I did a bigger bird a while back and had to use the CB roti ring for headroom. Set a roasting rack in a pan to keep it airborne. I had some apple wood in there for a little smoke, and it turned out pretty good. Next time I'll pick a smaller bird!

Well the cook time surprised me a bit. Even at 375 temp it was done in 2.5 hours.



One leg over cooked even being tented but the skin is nice and crisp an has a great flavor.

The flavor was very good. Surprisingly the vegetables I used to prop the bird in the pan with were freakin amazing. Carmalized celery and carrots.  Yum.

My wife made gravy with the drippings. I am now in a turkey/Sailor Jerry coma.

I can't wait to try another one.

Didn't take any carved pics sorry. My guest plans kinda got side tracked. I had hoped to have both kids and all the grand kids but only managed daughter and granddaughter.
