ribs - check, pulled pork - check, meatloaf up next!
« on: July 22, 2013, 11:06:31 AM »
I have been watching youtube videos on smoking meatloaf but they usually don't say the temp used or approximate length of time.  There are also different techniques used to cook the load - cast iron pan, meatloaf pan, directly on the grill.  Let's dive in to my questions:

1) Should this be a 300F cook or lower?
2) Approximately how long for 2 pounds of meat worth meatloaf - 2 hours @ 300F?
3) cast iron, meatloaf pan or directly on the grill

Since it won't be as long as pulled pork or ribs, I was going to bank about 25 coals, light about 10 more and place them on the charcoal bank plus add 2 hickory chunks.

I am interested to hear your thoughts and comments!

Meatloaf & fatties, I go @ 275, usually do smaller loafs.....would guess 1-1/2 hrs........check for internal temp is a GOOD thing on ground meats.....you want to be right at 165, most likely.....

If you pan, you'll need a second one with holes in the bottom....somewhere for the grease to drip to......these are manufactured or can be made.......
Another way is to cook 45 min. then overturn the pan carefully & cook the rest upside down ....or right side up, youir choice.....depending on how it looks at that pointr.......

I do smaller "personal meatloafs" & they cook just fine & get done slightly quicker........coals banked, or baskets both sides loaf(s) down the middle.......

One other thing I forgot.......ground meat takes on smoke like a bat-outta-hell, so go easy........... 1/3 of what you would do on  a longer cookup....... ;D

 Nailed it !!!!

Just right !!!!

You can see that there smoke ring just a bit in....that tells you it's just right......if it goes way down in there, it's every possibility it will taste bitter & over-smoked....BTW....you'll get some ring using only charcoal in most cases.....

I used 1.5LB of turkey and 2.5LB of pork for the meat.

Thanks!
