Breaking in my Charcoal Baskets

So for Father's Day I received a pair of charcoal baskets and I finally have time to mess around with them...
Put some Comp.K in the bottoms and foil in my drip pan...

Chimney 3/4 full of leftover charcoal from last week...

Gettin'hot!!!

Just some simple runnin'gear...

We like our chicken DONE at this house. Parts or whole (split and flattened) are usually done direct. Crispy skin and moist inside.
I cooked a whole bird last week with two banks of coals and it went well. I do like how the baskets are working out though!

When I got my Weber I made sure that Lowes gave me the baskets with it. Unfortunately I have never really had too much success with them...at least in the traditional sense. I use them to raise cooking pans off of the grate...E.G. Pizza and Cheesecake. I have used them for focused high heat cooking too....I was trying to get max heat for searing and had good results but actually had a cast iron pan sitting directly on the blazing baskets. I have tried to use them for a couple of low and medium cooks ( not quite as long as low and slow  ;)) but I had the same problems I had using my vertical smoker....The baskets get full of ash and choke themselves out. For shorter higher heat cooking I do like the direction control you get with them and the fact that you can move your heat source from one end of the grill to the other ...if you so choose but I have never had much luck with the Minion method using them.
If it needs to be Heated to be Eated, I can do it on my Weber!

I bought a set of baskets a couple weeks ago and I'm not too sold on them as of yet. They work "ok"(a bit too small), but I still prefer using the "naked" set-up of just dumping coals behind firebricks. However, I can see how they might prevent premature porcelain damage. I will have to try a bigger setup ala MacEggs (http://weberkettleclub.com/forums/weber-kettles-accessories/been-doing-some-fabricating-%28pic-heavy%29/) or maybe make up a shield that would allow me to keep the coal from direct contact with the side, still allowing me to use more space behind the bricks.

Today I am doing a low/slow batch of St. Louis ribs and using a snake.
I am loving the baskets for the 1-2 hour indirect cooks though!
