Salmon N Scallops on the Summit

Cast iron cook with Kerrygold butter and olive oil.  Seasoned with Red Lobster seasoning, our favorite.  Kellee made the best salad…..Happy New Year everyone!

Looks damn delicious ! Did the scallops turn out good. It’s very tricky to not rubberize them. It’s a beautiful thing when they come out right.

Thanks Walter!  Yes, the scallops turned out really good.  We do this cook often - probably boring you guys with repeats - and have the method down pretty good.  I love cooking seafood on cast iron or on a soapstone, just have to keep the instant read thermometer close by and flip before going too far with the crust.

Jammies have been definitely used this past week... We were off work and the temps were cold!

Thanks Robert!  It's now to the point with this meal that we mention fish n scallops and go into automatic mode.  It's an easy and satisfying weeknight meal that doesn't take much time.

Looking forward to meeting our "butterbean" as we've called her thus far.
