This was a fun cook and the ribs cook quickly this way.  This was before I saw the post on here about the best baked beans. I'll try that recipe next.

They took 1.5 hours. I took them off, sauced them, then wrapped them in foil and took them to a party in a cooler. They probably rested a half hour. Im guessing the grill was running 350ish.

I tried this once before but dried them out because I wasn't expecting them to cook so quickly.  So keep an eye on it.

I started half a chimney and poured them on the right side of unlit coal. Worked great but the left end of the left side rack probably needed a little more time. Next time I will dump the half chimney in the middle of the make shift snake and let it burn out in both directions. This will hopefully give a more even cook. The flavor was incredible. I used an oak chunk but will probably use cherry next time.
