Beef short ribs

Smoked some beef short ribs on my 08 WSM. Was about a 6 hour cook, got some decent bark, flavor was spot on.

Looks really good and agree, love the side table with the WSM.  I'll bet that's handy - I'm always using a second grill for a table when smoking on my WSM.

You always have something to put on it, a plate/dish, your thermometer, grill tools always something, comes in very handy

Looks good. When i do them I just let em roll at 250 or so to 205 or so w no wrap

This is a Weber work table, did you use something different, maybe a sidekick table?

The legs had 2 positions.  In the shorter position, it fit my One-Touch perfectly.  With the legs extended, I added 2 brackets to the outside of my WSM that would let me attach it there.  Now, again with the legs extended, I use it with my 26er.

Like I said, not nearly as much real estate as yours, but it is very stable and helpful.
