One of my familys favorite meals from the smoker is meatloaf.

Been making it this way for many many years now. Cant even remember the last time we cooked meat loaf in the oven..

Tried to post some pictures, but the files I have are to big for this site.

2lbs Ground Beef
1 lb Pork Sausage
1 Egg
1 huge squirt of catchup or bbq sauce
Worstershire Sauce
Ritz Crackers
Bell Pepper
Onions
Garlic
One package of Lipton Onion Soup Mix
Some of my home made rub
Pepper Blend

Chopped the things that need to be chopped, crack things that need to be cracked, shake the things that need to be shaked, all in one big bowl... mix it thoroughly together with your hands, and shape it like a big loaf.

I put it on a smoker for 250-275 degrees until the internal temp hits about 165, then I pull it and let it rest for 15 minutes.
Normally takes 2 - 2.5 hours. You can speed up the process, by letting is smoke at 250 ish for 1.5 hours, then bump the temp to 350 until it hits the target internal temp.

BTW, I never truly make the same recipe twice, I use what I have at the time and make it work.

That's the only way I do meatloaf now.  I cook two 2½ pounders on the 26er with a Slow n Sear.  One if for dinner, the other to pop in the fridge and slice up for sammies later in the week.

Bbq meatloaf is a staple in our house too. I use worcestshire, a lil ketchup and bbq sauce, I substitute crushed croutons for breadcrumbs, and I use sweet red bell pepper relish and sweet yellow onion relish in mine. Nothing better...
