I've been wanting chicken Parmesan for awhile, my wife isn't a huge fan but she's dealing with it.
Started 3/4 chimney full of coals while I prepped the chicken.
First I grabbed some chicken breasts and pounded them flat. Then I used some Panko bread crumbs, added garlic salt, Italian seasoning, and mrs dash. Did one coat of bread crumbs with lightly moisten chicken, next and egg bath then one final coat of crumbs.
Next I boiled some water for my noodles, and started the sauce.
On went the chicken, grill temp was just shy of 450. My wife bought me a cool grill pan the other day so I put it to work.
Went indirect for a bit, then wanted to brown it up just a hair. So I placed the pan over the coals for about 2 minutes (it will brown quickly) I jumped ahead of myself before the pic and sauced one opps!
Next I after everything was sauced I put fresh mozzarella cheese on top. I wanted to melt the cheese so I put a coal basket under the pan to raise them to the top of the lid.
After a few minutes it was semi melted but in fear of over cooking I pulled it early. It was 155 when I put it on the basket. My mozzarella was pre sliced around 1/4 I suggest thinner for a quick melt.
Next came the garlic bread, can have noodles and gravy without that!

It was nice and crispy & well balanced. My wife even enjoyed it ha!
