Sirloin Tip Ideas?

I recently got a 3 1/2lb grass-fed sirloin tip roast and have no idea how I should cook it.

I have been interested in curing/smoking recently and was curious if any members could recommend whether it would make a good candidate for pastrami or something else?

Rub it with mustard...season it with McCormick Garlic and Herb, the hot n fast until 130 in the middle. Slice it up thin and have French dip sandwiches.

I'm no doubt in the minority but I've always preferred sirloin and eye of round roasts done as pot roasts with taters, carrots, and nice thick brown gravy.
