Sea Bass grilled in Banana Leaf

Rub olive oil
Add sea salt and dill
Fill cavity with lemons and dill
Wrap in banana leaf
Grill for 30 minutes indirect
Scrumptious

Thanks guys. Sorry haven't been on lately. bbqking01 it was delicious. Banana leaf was from an Asian grocery store at 80 pence each!

I can't get sea bass or banana leaf here but I sure do wish I could.

Next time a catch a few sea bass in the Gulf. I'm going to give this a try, it looks delicious.

Publix supermarket sells frozen banana leaves.

Why the banana leaf? What does it do? How about just throwing the fish on the grill? That is what we do, but not a whole fish. Usually a half of a salmon, skin on.

Banana leaf traps moisture, creates steam effect, imparts flavor and protects the fish from burning. Some south East Asian recipes that  use banana leaves also involve charring the leaves w whatever food it's wrapped in. I believe some south or central American countries make tamales with banana leaves versus corn husks.

There's a Vietnamese treat that has banana stuffed in sticky rice then wrapped in banana leaf then grilled until the sticky rice is crispy on the outside and leaves are charred. It is yummmy.

I am wondering how close we could get to replicating this simply using foil? Bet we could get real close!

Foil would do serve same purpose, just wouldn't have any banana leaf flavor.
