Turkey Wing Flats - recipe ideas?

My local grocery has a pile of turkey wings flats on sale, I've never cooked them before, but with the holiday coming up, I'd like to experiment with a few recipes!

I've pretty much mastered chicken/chicken wings with the vortex and SNS, and I imagine the rules are the same?

Checkout meat church on YouTube. He is doing a holiday series and the first holiday series is Turkey legs. Could probably do wings similarly.

I’ve cooked turkey wings a few times now and the key is getting the internal temp to 185-200. That’s what they need to be tender. I typically deep fry mine and toss them in a sauce. The only time I cooked them in the grill I pulled them at 170ish and they were inedible. I assume they would be good grilled as long as you get the internal temp up.

I’d imagine turkey flats would work great with a Vortex as it does with chicken wings. I like ‘em fried as well. Try a little baking powder along with your favorite seasoning for crispier skin. Turkey skin doesn’t crisp up as well as chicken, so this might help.
