Sunday night cook on the 26

We were away visiting friends over the fourth. This is my late holiday cookout.
Firing up a couple chimneys of fuel.

Cast iron version of hasselback potatoes.

Potatoes and eggplant stuffed with garlic on the grill. The eggplant will be used for a dip.

Looks good so far....where's the rest of the pics?? Is this cook in progress??  Do those potatoes brown evenly when stacked like that in the CI pan??

It is in progress. They do brown on the top, but the CI skillet cooks them from the bottom. They have a nice contrast of brown and crispy on top and creamy on bottom. My family always like these. I cut up an onion, shallots, and garlic. These were dispersed throughout the potatoes.

Spiede marinated wings and veggies on skewers. Has some carrots and ginger on the foil.

Chicken breast and wings are done

Wife said potatoes are the best I have done to date. My 6 year old loved the wings. Spiede is a Binghamton , NY thing, but it is great for chicken.
