Temperature differential?

There is a 45-50 degree temp differential between the kettle lid (top of dome), and the grill grates.

Smoking brisket now, and the grate is at a steady 250-255, the lid is at 300-310. And the meat is sitting near the middle. Just wondering how the temp differential will impact the cooking.

You can get thermometers that you can calibrate. I had one on my wsm that was a river country brand. I adjusted it so it read what the grate temp is.

I'm using the Thermoworks Smoke, and it is good. Might look into something else for my lid.

I did the same with one from e-bay.
I did have to create a thread adapter with some gas pipe fittings from Lowes as it has a larger stem thread.
All I did was lay the digital probe from a different thermometer on the grate get it to 300 indicated (about median fort the temps I use & match the two after it stabilized. I'd say its within 2~3 degrees.

SMOKE FREAK

Quick question. Was the therm over the coals or over the meat?

I don't care what the temp over the coals is. I wanna know about the meat side...

over coals, the meat could be any of several temperatures regardless of the griddles temp depending on how well done it was.
If I want a meat temp I stick the probe in the meat.
