Wicked Good BBQ Beans!

Ok...here is the recipe along with a couple photos.
We always (ALWAYS!) put a pan of beans under whatever we are smoking, ribs, pork shoulder, chuck roast, etc. All of our guests rave over these.

You can modify the recipe as you like, but here is the base info for starters:

6-8 strips of bacon, cut into 1/2" squares
1/2 medium onion, diced
1/2 bell pepper, diced
1 - 2 jalapeno peppers, seeded / diced
1 can pineapple chunks, drained
55 - 60 ounces of your favorite canned baked beans
1 cup brown sugar - packed
1 cup ketchup
1/4 cup mustard
3/4 teaspoon salt
1 tablespoon fresh ground pepper

Saute bacon in a skillet until crispy, and remove.
Saute onion, and peppers in the bacon grease until tender.

In a large mixing bowl, combine all other ingredients. Stir in bacon, peppers, onions, and pineapple. Pour into a 12X9 aluminum baking pan. If it looks dry, add some more ketchup.

Position the beans in the kettle under your meat, and allow to smoke for 2 1/2 to 3 hours.

Yes, for sure! I don't always put bacon in the beans. The above recipe is just good guide, and you can tweak it as much as you like. But I always use the pineapple! Try it, you'll like it!

Dang! You gotta try these beans. They are that good! I actually got the idea from a restaurant I worked at during my high school years. They had a large pit, with racks of ribs hanging suspended from meat hooks on a circular rail type track device. Below the ribs were the BBQ Beans, catching all of those flavor packed drippings.

@TXFlyGuy just wanted to thank you for this recipe.  I've made these twice so far this year - everyone in the family says these are the best baked beans they've ever had - even my mother in law!  These are on the menu for this weekend along with two butts on the WSM.  Cannot wait to get the smoke rolling!

I am so glad this worked for you!

The beans taste so much better when they are smoked along with the meat, catching those flavorful drippings.

We have found that 4 to 5 hours is the longest time you want to leave them in the kettle / smoker. Longer times will dry the beans out a bit.

We recently did this recipe in a crock pot. The beans were very good, but not even close to what you get when they are smoked!

This is the third baked bean recipe I've seen that uses fruit in it.  All sound good.  The other two are Keri's hog apple beans from TVWBB site and Wampas' peach beans recipe from the Brethren site.

Interesting addition of pineapple. We have a lot of that here.

The pineapple really goes good with the BBQ beans!
I love Hawaii. I was based there flying DC-10's from 1990-1994.
My wife and I made many trips to the Dole Pineapple Plantation. We used to smuggle that stuff home in suitcases.

I love Hawaii. I was based there flying DC-10's from 1990-1994.
My wife and I made many trips to the Dole Pineapple Plantation. We used to smuggle that stuff home in suitcases.
I worked part-time as a skycap for CO at that time. It was fairly easy to smuggle stuff back then. I got some "sugarloaf" pineapples almost ready, and will try that with the beans. 🤙🏼

Thanks for the recipe! It's very similar to what I do with mine except for the pineapple. And why haven't I ever thought to put them UNDER the meat?!
I am definitely going to give this a try.

Absolutely! My experience shows that 4 to 5 hours is the maximum time you want the beans being smoked.
This works well with ribs, which I only smoke for 3 to 4 hours.

Pork Shoulder or Brisket takes 12 hours (+/-), so I pull the beans at around the 5 hour mark.
