Speaking of pineapple, what size can do you use and do you drain or use the liquid too?

We always buy the canned pineapple chunks. Then we drain all of the liquid from the can prior to adding to the beans.
The size is a 16 or 20 oz can.

They look good. I am a huge fan of Kent Rollins' Cowboy Beans. The diced/minced chipotle peppers in adobo sauce add a ton of flavor and heat. I am sure the jalapenos you added did pretty much the same thing, minus the smoky/adobo taste.

Never considered adding chipotle peppers. Might try that next time.
But the beans pick up tons of smoke flavor from the fire. We normally use cherry or pecan wood chunks.

After smoking the beans on your kettle or smoker, you will never go back to making them in an oven, or even a crock pot.

This beans recipe never gets old either.... My mother in law requests these now and I love making them - especially on the WSM.

This recipe was actually given to me by a fellow Continental Airlines pilot.
It has turned out to be a perennial crowd favorite!
And it's a staple side dish here whenever I smoke something...ribs, Brisket, pork shoulder, just about anything!

My bean recipe changes every time because I’m usually using what I have on hand.

Can’t wait to try this recipe. I call them basement beans since they cook below.
