Just wanted to bring this back up with some "lessons learned" if I were to do it again - I would not do a butcher block top. When firing up the chimney I have to cover the top with a welding blanket to keep it safe. A stainless or stone top would be a better option.

That being said everything else has worked out to plan and I'm loving it.

Here it is rolling smoke on a couple 10 lb pork butts.
