Bearded Butcher’s Stuffed Flank Steak

I watched these guys the other day and they made this dish.  Butterflied flank stuffed with onions, peppers and feta cheese. Thought I'd give it a roll.

About an hour indirect at 275F until they reached 122F then finished direct to 135F.

I liked it but next time I'm going to pound out the flank to have a more consistent thickness.

Well done! 

Saw this on their channel as well. I was wanting to make it for my wife. She loves feta. Hates the peppers. So I would do green olives & feta.
