We're vacation in St George Island, Florida.
Apalachicola Bay is known for wild caught oysters, but has been shut down by the state.

Oysters are still available, they're farm raised locally or sourced out of state from Texas or New Jersey.

Two dozen New Jersey oysters were purchased at a local fish market. They're flown in daily.

Oysters were steamed on a Weber kettle for lunch. After being shucked they were topped with horseradish and Crystals hot sauce. Washed down with a cold beer.

After lunch a rack of ribs was loaded in the grill, along with jalapeno poppers and bbq beans.

Good lunch and dinner at the beach. Small beach fire after dinner.

I've not done oysters on the grill. Do you cook them directly on the grate?

Yes directly on the grate. Either direct or indirect depending on the how hot your coals are and size of oysters.

Oysters will release steam and open slightly when warmed. Dress with your toppings and slurp from the shell.

Use washcloth to handle hot oysters.

Born and raised on the gulf coast and this is the best way to do oysters imo. Everything looks great

I agree, oysters on the grill is the best way to eat them!
