I made these a few weeks back and have been wanting them again.

I used London Broil as the cut because it was on sale and looked really good. I used some fajita magic seasoning, really wish I marinaded it.

Cut up some red, yellow and orange peppers. An onion and about half of a tomato then some seasonings before they hit the pan.

Old Homey setup for the cook

The veggies hit the skillet

Mid cook after the first flip

Let the meat rest and grilled up some tortillas while I waited

Sliced the meat down as thin as I could by hand

Plated up ready to eat!

London Broil works pretty good for this, but not as good as a thinner cut of meat. So I would cut the slices down into smaller pieces so it doesn't pull out of the tortilla as your taking a bite.

Either way it was a great dinner! Thanks for looking

Looks great. Next time you cook a London broil try slicing it at a really shallow angle so your cutting across the grain instead of with it. You'll find it a lot easier to chew.
