Always love when I give this technique the nod for my steaks, this technique shines for hard roasting veg for salsa as well... do yourself a favor and get past the fear of dropping nice steaks onto your lump charcoal.

I roast veggies that way often but the wife unit does not want her steaks done like that...

Loved the video - as always!  Takes some guts to put some gorgeous steaks right on the coals like that.  Results looked amazing!
