I went into a store yesterday and the meat was all gone except for a stack of spareribs and babybacks. I thought, "I can do something with those!"

But what are some ideas of lesson common, cheap, or even what some might think is weird or gross cuts of meat? I'm talking stuff that might still be in stock when everything else is sold out.

Those pre packed cornbeefs that will be on clearance after today make excellent pastrami.  De-salt, re-season with coriander, black pepper, and garlic then  smoke, steam (optional), and enjoy!

So I don't know if the beef cheek thing was saying that it was gross, but I think cabeza is great! And I have brisket flats, just picked up four loin back ribs from Safeway. Also got four large London broil to do my jerky with.

Don't have any beef or pork recommendations but I am really bummed.  Went to five different supermarkets with traditionally decent meat counters and could not find a single boston butt.  I have all my equipment now, my red oak, my Fireboard thermometers and was getting ready to try and smoke my first brisket this Sunday and now the Novel Coronavirus hits.   What is this world coming to?

Have Fun;

nah not gross at all. One of my favourites, but a lot of people feel weird about it.

I used to, until my son convinced me . Said it was the best part of the cow...wasn't far off. Oh yeah the Safeway by my house in Phoenix, had a bunch of Boston butts, and some loin back ribs, most everything else was gone...

I will attest to this. Just did exactly this the other day with great results.

A chuck roast will make excellent sandwiches.  That's my go to cheap cut.
