Pork butts for peppers

Did two boneless pork shoulders. Approx 6 hours on Weber kettle with apple and hickory. Now in roaster to shred in the morning. Making special mixture to stuff in the peppers. Prepping to make about 400 jalepeno peppers. More pics to follow...

That's a lot of peppers!!!  Your gonna need to put one of those hazmat suits to clean and cut all those. Good luck.

Well it should keep the carona virus at bay. I'll be making mixture to stuff these babies tomorrow for Saturday cook. I'm going to try to do them all at once on my SmokeFire...fingers crossed

Pork shoulders look really nice and wow at the peppers!  Brings a tear to the eye.....

I'm impressed. And humbled...

Wear gloves when de-seeding them. I once did about 75+ and had a hot hand for a few days. No amount of washing helped. That capsaicin leeched into my skin. I eventually took a pumice stone to scrape off the outer layer of my skin. Sweet relief.

I'll be humbled by the time this is over. The worst part, is after coring them out is the rinsing of the leftover seeds. It can take you breath away. I have pretty thick skin, I just have to remember no eye itching, or other itching, because it will cause heat....the peppers cored out, and the mixture to stuff them with.

And then there was the few, I did on my kettle, they turned out much better the the SmokeFire, just need long to cook on the smokefire

So end result...SmokeFire is another successful cook. Although another hour would have been good

The 22" kettle was a big success ad always
Bottom line I'm happy now to wrap and transport to the event, will report on how that goes
Thrones in foil pans are from SmokeFire
Ones in pepper trays are from the kettle.
