2.5kg coated with mustard then rubbed with 4Rivers coffee rub.
Spritz with Apple juice.
Cooking time 8 hours with an hour to rest. Simply delicious?

How often did you feed it charcoal? At 225?

I'm sure he never had to add coal. A wsm will easily go 12+ hours.
