"Never done that" Ribs

rubbed with mustard "Never done that" modified store bought rub "Never done that" heavy coat of low carb brown sugar "Never done that"  built a snake "Done that" both indirect plates in place "Never done that" 2.5 hours then mopped with apple juice vinegar some rub and brown sugar "Never done that" and wrapped "Never done that" another 40 minutes then unwrapped for another 30 I was beyond pleased
Seeking a Black Sequoia I know I know, I'd settle for just the tabbed no leg grill

Looks awesome. I'm surprised you hadn't tried wrapping until now. I wrap when I use the kettle and I do not when I hang in the wsm. It's been awhile since I've gone unwrapped in the kettle. I need to do that again soon.

So they drip right on the stone?  Do you have to clean anything or do you just let the heat clean it?  I really like the look of that accessory to be able to use the whole grate.

Drip right on the stone, cleans up with a metal spatula or my coal rake, I too like the indirect for the whole kettle it is a neat setup, I also found it kinda funny that I have never wrapped
