This mod is mainly to achieve consistent temperatures throughout the cooking grate by using a stacker, diffuser and a poortex.  Only tricky part was figuring out the optimal diameter for the diffuser.  I've experimented with a few different sizes ranging from 6" to 12". Took some trial and error but the 8 1/2" diameter yield the most consistent temperatures on the cooking grate.






8 1/2" diameter diffusers.

Stacked to create an air gap which prevent the top diffuser from getting too hot, otherwise drippings will start smoking/burning.

Filled with ashes for easy clean up and also  help prevent the oily drippings from smoking. 

Ambient probe.



Thighs cooked  evenly while remaining on the same area for the whole duration.

All purpose lid. Photo was taken while preheating. With the bottom vent  roughly 3/4 open and the 4 lid vents at 1/4 open,  it maintained a temperature  of 500-525F for the whole duration of the cook.
