Cast iron bacon & eggs breakfast...

Almost totally ruined it but was still delicious.  Had to make a beer run but ended up taking much longer than anticipated.  Got back and it was already over cooked.

Center of yolk should be soft and partially runny.  Once it has a texture of a hard boiled egg, the meat  is bound to be dry and over cooked. Didn't help that i used 85/15 ground beef.

Not much to it. You can use any type or combination of ground meats.  I've used pork &  beef, pork & shrimp,  pork & chicken, strictly pork or beef, ground pork sausage etc.   Spices/herbs  for the meat are all up to your personal preference.  For the toppings(placed on top of the eggs), it can be cheese, chives, finely diced tomatoes, green onion and so forth. 

Recipe for this cook...
Ground beef, salt, cracked black pepper, smoked paprika, garlic powder, finely chopped  yellow/green onion, sugar and a pinch of ground cinnamon. 
Didn't use any toppings on the eggs since none were available at the house.  The rest should be self explanatory. 

Cooking time varies  on temperature.  I usually cook it anywhere between 425F to 475F for 25-30 minutes.
