Trying out some low & slow ribs to find out what's all the hype are all about. Shooting for 250-260F.  Weber briquettes along with pecan chunks. This will be no wrap or sauce.  Sauce will be served on the side for those that wants it.  Rub consist of salt, brown sugar, white pepper, red pepper flakes, paprika, onion powder, annato powder, tamarind powder. Spritz with a mixture of cranberry juice and oil every 45 minutes.




Consistent temperature from top to bottom.

Center ring help prevent the lit coals from spreading outward too quickly.

Monster of a set up! Very cool! The ribs looks amazing as well.

Phenomenal set up and ribs look perfect. Did the inner ring slow the charcoal down and ignite the outer circle as planned?

Turned out excellent.  Taste, texture and color was phenomenal.  Only minor complaint is that the they turned out a tad too soft  for my liking. I prefer pork ribs with a bit more bite to it.  No  such complaints from the guest though.  There were 13 of us and it was totally wiped out in less than 45 minutes.

The inner ring worked as intended.  When i was done cooking, the coals on the inner section was halfway  depleted while those on the outside perimeter were just beginning to get started.  Got too carried away   with the coals though.  Just the center ring would have been more  than enough.
