Slapped my first brisket on the grill at 5:00 AM...I'm nervous as hell! Wish me luck!!

Well 7 hours in and I'm now at 156 degrees on the meat and holding steady at 228 degrees on the kettle!....I can't wait for it to be done!!

Wrapped er up when it hit 160 and cooked it on to 190ish

Probe it for tenderness....some will finish in the high 190's...others won't probe tender until 211. When you pull it vent the steam for a little bit.
