I use the vwengguy method. Basically one hour indirect with a small piece of wood in the coals and one hour wrapped with a tiny bit of beer or apple juice or whatever you like. 350-450. I bank a full lit chimney to one side with all vents open.

In this case I used only salt and pepper for seasoning and I sauced at the end and cooked over direct for a minute to set the sauce.  I don’t think my coals were fully lit starting off because the first hour was cooking around 350 and my temp went up the second hour to 450 while wrapped.

Your welcome. There are so many different ways to make ribs. It’s fun to experiment once in awhile.

I need to revisit low and slow and I also need to try hanging ribs.
