Fired up the kettles for for a birthday/housewarming party, made some jerk wings for an appetizer.

Did you cook those over the hot zone and then stack them on the other side to hold?

Hank, I did a reverse sear; built fire with Stubbs, Embers and some pecan wood.  Cooked at about 275 over a water pan for about 30  minutes, turned halfway through.  Sizzled on the hot side for about 30 seconds a side, mostly out of habit as I got plenty of good color from the smoke.    Used a mixture of Walkerwood mild and Walkerwood Spicy, great flavor an a little good mouth burn yesterday, but no afterburn today.
