Yes, I do that with my 18" kettle and a pizza stone but now I want to set up my 22"kettle like that for briskets or more racks of ribs.

makes perfect sense.

I wonder how a pizza stone would work vs. a cast iron griddle...and how important thickness of said stone or griddle would be.

The pizza stone works great in my 18"er. I was going to buy a Lodge griddle but it was smaller than the pizza stone so I went with the stone for more space.

I light a second kettle, then put a potted plant between them when I need more room. Ceramic Insulation!
