This was a fun cook. I found a 3.6 lb tomahawk for sale on my way home tonight.  I cut the bone off and reserved the hard fat for searing later. I seasoned it with salt pepper garlic. I used the vortex upside down in the 26 and reverse seared and monitored the temps with the smoke. When the internal hit 100 I placed the 12” lodge over the vortex and closed the lid. At 127 internal I seared the ribeye in the cast iron with a chunk of its own beef fat, crushed garlic cloves and most of a stick of butter. Can’t lose right?  It was the best sear I’ve ever done on a steak and it was super juicy and tender.  I slightly over cooked it but it was still fantastic.

You had me at 26 !  and again with Tomahawk then cast iron and it's a given that where there is smoke there is fun, grate cook

Thanks guys. It was the first time I’ve seared a steak in the skillet over the coals. It works fantastic for blazing hot even heat on cast iron.  I’ll be doing my next steaks this same way.

At what point did you put the cast iron pan on the grill?

I put the pan on the last 5 or ten minutes that I was cooking the steak indirect so it would be ready.
