Thanks guys. It was good. I borrowed my brothers sous vide to try it out.

I don't know if I can tell a difference. I would have to get two of the same steaks and grill one normal and one cooked sous vide to get a better comparison.

It does make it super simple to cook a steak to a specific doneness. It would also be a nice way to finish one off in the cast iron skillet. I still have never cooked a steak in the skillet. The kettle is just too good.

It was super simple. 130 sous vide for two hours then probably seared a minute or less each side.

Of course you do have to plan ahead which I'm bad at. That's why we didn't eat until 9

I have found sous vide to be the most useful with thick filets. I struggle to get the doneness right on them and messing up an expensive cut of meat hurts my soul
