Stuffed pork loin

This is my own creation although I’m sure it’s probably similar to some recipe out there.

I opened up a loin then sautéed some sweet peppers and onions and garlic. After that I added balsamic vinegar and spinach to the skillet and simmered a couple minutes. I seasoned the pork inside and out with some Tony’s and some Italian seasoning. I put the veggies in and topped with 6 mozzarella sticks and rolled the whole thing up. It turned out really good with my wife’s mashed cauliflower and cheddar cheese.

Oh ya that looks gooood . I wouldn’t mind giving that a shot. Could be good with some jalapeños in there too.

Thanks everyone it was fun and fairly simple to make.

Stuff them however you like. I wish I would have added mushrooms but mrs hoosierkettle doesn’t like them.

The whole meal was low carb but the beers were not unfortunately.

Only my wife and I that night. I vac bagged the rest of it in thick slices. We just had it for dinner last night and I still have enough for one more dinner in the freezer.

I grated some fresh Asiago and hit it with some red pepper flakes last night. It was great.

I have done this once or twice with great success.
There really is no rules as to what one can "stuff" it with.

Yours looks delicious!  Got me thinking...
