You will need the high temperature to seal in the moisture to have a moist and tender interior.

Takes as long to get up to temperature as the actual cook itself.  Great during a cold nasty weather. Just enough time for couple beer or so. Best if eaten within 30 minutes  also.

Looks great.  Sounds like the meat gets tender enough even with the short cook...so that's cool.

I'm with you on the low and slow. No hurry, no worry. I've been BBQing ribs for years, and never had a need to rush it. Hey, what ever floats yer boat... go for it!  8)

Totally different method for a totally different intended result. Cooking ribs on a kettle is not limited to low & slow smoking.
