I highly recommend Berkshire pork over Yorkshire. It's a higher quality meat with more marbling and flavor than Yorkshire. IMHO

I used to live four hours west of Hatch, NM. A co-worker of mine in the early 90's would make an annual road trip to Hatch and pick up 20-30 bushels. I'd roast two bushels on my 22" kettle, vac pack and freeze.

In the late 90's I started buying Hatch chilis from the local Mexican markets. They'd have a gas roaster setup in front of the market and were sold by the bushel. The smell of roasting Hatch chilis is intoxicating!!

Attached pic is an example of a gas fired chili roaster.

All-natural pork loin, seasoned with OakRidge Dominator Rib Rub, cooked on the Kamado Joe over a mix of B&B and Blue's Hog lump at 275F, and more than a few beers in. My new grill buddy Daisy is not up for a picture, but me thinks this is gonna be gooooood.
Happiness is found under the lid of a charcoal grill.

Chesapeake Weber

An asian inspired marinade on some local chicken and beef with shiitakes and farm fresh eggplant and green onions.  Finished with a Japanese grill sauce I found.  Always a win when I can create something and everyone in the house likes it!  Picky eaters often means one or more are not thrilled, but we got it tonight.  And it's finally cool enough for a fire tonight, with s'mores (no pics of them).
