With the impending storm and the threat of quite a bit of snow starting tonight, I'm doing the only logical thing.

Smoking some baby back ribs.

Instead of getting the temp up to 225F, I got it started and put the ribs on for some cold smoke. It's getting there, slow and sure.

Happiness is found under the lid of a charcoal grill.

Beef back ribs in the winter storm in NC. First time I've ever smoked beef ribs.

Breakfast burrito's while the pit comes to temp.




Cooked for 2.5hrs until 170 and then wrapped with butcher paper and cooked an additional 2.25 hrs until 202 and then rested for 30mins. Unbelievably tender, juicy, and flavorful!
