Kettle Pizza

Homemade dough per Ken Forkish recipe in "The Elements of Pizza" book. It was his 24-48 hour pizza dough recipe. It was light airy with lots of small air pockets and a soft chewy texture.

Toppings: fresh mozzarella cheese, onions, red bell peppers, pepperoni and homemade Italian sausage.

Thanks Robert, we've got tons of leftovers so you're in luck!

Popper filling consists of ground and browned chorizo, chopped green onions, clove of garlic, jalapeƱo cream cheese, green onion and chive cream cheese, one cup each of grated cheddar and Monterey Jack cheese, tsp Worcestershire, generous pinches of kosher salt and fresh ground black pepper and a tbsp or so of avocado oil.  Love this recipe!

Fired up the genie for tonight's dinner.  Top sirloin steaks, roasted potatoes and peppers n onions.  Wifey did most of it and she loves this grill!  Yes she's wearing shorts lol....

Roasted red bell peppers, that will be seeded, vac sealed and frozen for future use.

Dinner:
Tri tip, corn on the cob and brussel sprouts with balsamic vinegar reduction. All food was cook on the 26er with lump coal and oak chunks from my back yard.

Beer was brewed by Wooden Robot located in Charlotte, NC. It's one of the best IPAs I've ever drank. I've drank a lot of beer ....Strata Caster was pricey, four pints  at $17. Well worth the price. I highly recommend if you see it give it a try, you won't be disappointed.

My wife stuffed butterflied chicken breast with cream cheese, jalapenos, cheddar cheese and spices. Each breast was wrapped with four pieces of bacon.

Cooked dry pinto beans seasoned with  homemade buckboard bacon.

White rice was seasoned with a half packet of Sazon Goya coriander and annatto seasoning.

Homemade fire roasted salsa from last weekend. 

I cooked chicken, hot dogs and buckboard bacon on the 26er with lump and no wood chunks.

Wow that looks amazing Robert..... all that and hot dogs too!?!? Chicken looks especially good....
