Last night's cook.  Ran into technical problems, so not able to post last night.

Grilled a couple of bone-in pork chops with a homemade Char Siu glaze.  EVOO brushed on chops then rubbed the chops with a little of my normal all purpose BBQ rub with a bit of Chinese Five Spice added to the rub. 

Brined the chops for 5 hours in a typical brine with a can of ginger beer added.  (Brine -- Water, salt, brown sugar, 8-9 peppercorns, three bay leaves and the can of ginger beer).

For the glaze I used Hoisin Sauce, Honey, Brown sugar, Soy Sauce, Dry Sherry (did not have any Chinese dry wine or sherry), garlic, ginger powder and red food coloring.  Glazed both sides of the chops and put over direct flame for a few seconds for a little caramelize a bit then off the direct flame to set the glaze. 

Wife loved them so must have been good.

Oh, should have mentioned with the cook above, I grilled the chops without the glaze until around 140 before adding the glaze.  Adding too early will probably burn the glaze and create a bad experience.

@double_p those look amazing - is the taste consistent with their brats too? I can envision soaking the patties in some beer prior to a cook...

They taste a little different than a regular brat but not much.  I actually might like the patties a little better.  We haven't tried soaking them in beer yet but probably will.
