Peruvian chicken on a kettle pizza insert to give it some height. Working well. Wouldn't recommend using the lid at all as it traps too much heat and can cause it to burn.

Your gonna mix you over medium eggs in with tjose hash browns right? Those hash browns are cooked perfectly.

I decided to fire up this crate and barrel once before I swap it into the ssp.

You will need a few strip steaks seasoned to taste.  Sirloin would do.  Two bell peppers and two onions are cut up to your preference.  I cook the peppers indirect in the cast iron with a bit oil  and salt and pepper till tender.   You can do them direct over medium heat too. I cook the steaks to medium rare reverse sear and take them off to rest and cut in to strips on the cutting board.  You'll need a cup of rice.  I use a stir fry sauce from Meijer that is a little spicy and sweet.  Nothing fancy.  Combine all the ingredients back in the pan to marry up.  That serves my me my wife and daughter.  My son turns his nose up at it.

My grill has just been set up, and just going through a seasoning run...



My Slow & Sear is coming today, so I'll probably do another one later for that grate and then make some thighs as a test run.

Then the real fun will begin tomorrow...
