Did an experiment.  "Reverse sear", high directly above the coals but with the vents 1/8th open to keep the heat low.  Got some good smoke from the fat dripping.  Pulled it off at 125 and carryover took it to 136.9.  I was targeting 135.  I am very pleased with this method and I think it will be my go-to from tomahawks from now on.

Pork butt and ribs on the 22" WSM along with jalapeƱo poppers and corn on the cob on a blue OTP.  Used the MEATER+ on the butt and it worked perfectly.  Had the Maverick XR-50 monitoring temps as well and both thermometers were very close to each other during the cook.  Used the inkbird on the OTP for pit temps only.  Kellee made a chocolate ganache bundt cake that was amazing.  First time using a couple of my Weber lunettes.  What an awesome day to welcome Spring!
