I have to give my wife props, she's the one that puts it all together. I just fillet the pork loin and grill it.

She uses the same combo stuffed into chicken breast and 1-1/2" thick bone in pork chops.

If you know how to smoke a Boston butt, then you can smoke a packer brisket.
Keep it simple S&P, meat and fire.  Pull when probe tender and rest for a minimum of two hours in a cooler.
