I do my pork butts overnight using the snake method, might be an option if you have the time before

Cooked 2 8lb butts today on my PBC. Hopefully one day can get a WSM but have enjoyed this PBC especially for chicken and ribs. The family decided they wanted the standard ENC style BBQ so will chop and sauce on Thurs. boy was it good and hard to wait to eat it lol
