Used Ground Chicken for the first time

And, it turned out delicious!

However, it requires some back story:

I picked up a package of lean ground chicken from the local Asian grocery store.
It was about 20 oz or so.  I added 2 eggs (probably only needed one), bread crumbs and some seasoning.
Proceeded to mix it up... Well, holy sh!t, it was like I was working with epoxy.  WTF?  I had no idea.

I somehow managed to make 2 patties and a bunch of meatballs.

I was initially hoping to grill these, but I decided to go a different route... Cast iron and coconut oil on the kettle.
Then finished ever so quickly over direct heat for some char.  Literally seconds...

Because this was an experiment, I found some half freezer-burned buns and thawed them out.
Next time, I will make an effort and get some fresh ones.

Growing up, I ate a lot of McChickens.  Couldn't get enough of them.
Maybe it was my adolescent taste-buds, but the last time I had one, it was terrible.

I prefer the mayo-lettuce combo with this....

My next-door neighbour came out when I had the meatballs on and asked what I was doing.  I told him the story.
He said to use olive oil on my hands next time and that will help with the stickiness.  Dunno why I didn't think of that...

Oh well, next time. And, there will be a next time.  These were fantastic!

I've never thought about using ground chicken.  I love eating chicken sandwiches like that at diners. Those look great!  That might be my next roti cook.  Some chopped onion in the mix would be good.

I use ground chicken for burgers and meatballs all the time... especially since my fiance wont eat veal.. so I do ground beef, ground pork and ground chicken and they come out bomb! Good work

Yes you want to use cold water or olive oil on your hands to help with the sticky ground chicken.  Adding egg is a good for a binder, but also makes it stickier - definitely use just 1 egg only if needed, a lot goes a long way here.  Honestly, I've stopped using the egg, chicken is usually pretty sticky and binds well without it.

I've made them before using:
- 1 lb ground chicken
- about 2 garlic cloves minced
- salt and pepper to taste

Mix in bowl with hands, then form patties.

Optional
- 1/4 of an onion finely chopped or chopped scallions
- minced parsley

For the breading:
- 1/2 and 1/2 mix of panko and normal plain bread crumbs
- milk
- add paprika, chili powder, grated parm as desired

Coat with bread crumbs mix, dip in milk, coat in bread crumbs mix a second time.

I would work with cooled ground chicken as well, I've even gone as far to place in the freezer for a few minutes until it just starts to freeze but is still formable before working with it.

anyway, just some thoughts.

Sounds awesome, they look grate too. Another good way to use chicken
