Beautiful! Loving it!  Special Chinese style cook for my Red LE cook. Whenever that will be.  ;D

For now, first cook on the Slate Performer silver. Just over 1hr into it. Might start a thread for this.

Pork shoulder.
Pork butt, country style ribs  etc work just as well.
